Sticky Gochujang Cod

Ok, so I know some of you have been asking—how do I find the time to cook a full dinner during the week? I get it. Time is never on our side, especially with kids, homework, and bedtime routines that somehow take twice as long when you’re already exhausted.
Cooking is what I love to do, but that doesn’t mean I always have the energy. And last week? Last week was one of those weeks. You know the ones—where 5 PM sneaks up on you, the kids are already snacking, and you’re staring into the fridge like it’s about to give you answers.
That’s when I remembered this Sticky Gochujang Cod—a 20-minute dinner that feels like actual effort (without really trying).
I used to think weeknight meals had to be basic to be quick. But let me tell you—this sticky, caramelized, slightly spicy salmon proved me wrong.
🍯 The glaze? A quick mix of gochujang, honey, garlic, and soy sauce.
🔥 The cooking method? Hands-off. 12 minutes in the oven, and it’s done.

Now, if your little ones aren’t into spice, swap the gochujang for teriyaki sauce, and you’re golden.

The Recipe
1-2 lbs of Cod fillets
3 tbsp of Gochujang paste (Substitute with teriyaki if too spicy)
3 tbsp of red miso
2 tbsp mirin
1 tbsp rice vinegar
1 tsp of minced garlic
2 tsp of ground ginger
3 tbsp of maple syrup
Scallions for garnish
Sesame seeds for garnish
Preheat your oven to 425°F. In a bowl, mix the gochujang paste, red miso, mirin, rice vinegar, garlic, ginger, and maple syrup. Stir until smooth and then coat your cod fillets thoroughly.
Line your baking sheet with parchment paper. Place cod on baking sheet and bake for 12 minutes or until caramelized evenly. Remember to flip halfway through to ensure caramelization on both sides.
Remove from oven and garnish with scallions and sesame seeds. Pair with bok choy and white rice.
